Chilli Oil (Sichuan)


1 cup neutral oil
½ cup Supreme Chilli Flakes
1tbsp Sichuan peppercorns (optional)
1 tsp salt
1 tbsp Supreme Ginger Garlic Paste
1 Supreme Bay leaf
1 Supreme Cinnamon stick
2 Supreme Star Anise
2 tbsp Sichuan peppercorns


Add chilli flakes, 1 tbsp Sichuan peppercorns, ginger garlic paste and salt in a bowl. Add oil, bay leaf, cinnamon stick, star anise and Sichuan peppercorns in a pot over medium-low heat for about 6-8 minutes. Remove from heat and cool for 5 minutes then strain the oil over the  chilli flakes. Allow to cool completely then pour into a sterilised jar. Store in the fridge.
