Cabbage, Peanut & Coconut Slaw


550g white cabbage, finely sliced
1 large carrot, finely shredded
1 medium onion, finely sliced
¼ cup oil
¼ cup Supreme Pink Peanuts, chopped
¼ cup Supreme Coarse Dessicated Coconut
1 tsp Supreme Mustard Seeds
½ tsp Supreme Cumin Seeds
2 green chillies, finely chopped
½ cup Supreme curry leaves
Salt to taste
1 tsp sugar
Juice of ½ lemon


Heat oil in a frying pan over medium heat. Add mustard seeds, cumin seeds and curry leaves; cook stirring frequently until mustard seeds start to splutter. Add dessicated coconut and chopped peanuts; cook stirring constantly until lightly toasted. Finally, add green chillies, salt, sugar, lemon juice, sliced cabbage, shredded carrot and sliced onions. Stir well, remove from heat and serve.
