Sausage & Bean Pie

INGREDIENTS

9 sausages
1.2 kg potatoes, peeled and cut into chunks and boiled in salted water until fully cooked
150g salted butter
3 spring onions, finely sliced
1 tsp Supreme Coarse Black Pepper
Salt to taste
1 cup double cream
2 tbsp oil
1 large onion thinly sliced
2 cans of baked beans
½ tsp Supreme Coarse Black Pepper
1 tsp Supreme Cumin Powder
1 tsp Supreme Coriander Powder
½ tsp Supreme Chilli powder
1tbsp Supreme Hot Madras Curry Powder
½ tsp Supreme Turmeric
½ cup ketchup

METHOD

Heat a frying pan over medium heat. Add sausages and cook until fully cooked through. Remove from the pan, cut into bite size chunks and add to a casserole dish. Add boiled potatoes, salted butter, spring onions, coarse black pepper, salt to taste and double cream into a large bowl and mash until smooth. Set aside. Heat a pot over medium heat, add oil and sliced onions and saute until soft. Add coarse black pepper, cumin powder, coriander powder, chilli powder, hot madras curry powder and turmeric powder, cook for 1 minute then add ketchup, baked beans tins and a tin worth of water. Bring to a boil then simmer on low for 15 minutes. Preheat the oven at 180°c. Gently pour beans over the sausages and evenly spoon/ pipe the mash on top. Bake in the oven until the pie is bubbling and a golden crust has formed on top.
