INGREDIENTS

1 whole chicken with skin cut into quarters

Marinade:
¼ cup soy sauce
Juice of 1 lime
1 tsp Supreme Onion Powder
1 tsp Supreme Garlic Powder
2 tsp Supreme Paprika Powder
2 tsp Cumin Powder
½ tsp dried oregano
½ tsp Supreme Coarse Black Pepper
2 tbsp oil
Salt to taste good

Garnish:
Coriander leaves
Lime wedges

METHOD

Add all ingredients for the marinade to a mixing bowl and whisk until well combined. Put chicken and marinade in a large sealable bag. Seal bag and rub well so chicken is well coated in the marinade and refrigerate for 24 hours. Preheat oven to 200°c. Remove chicken from the refrigerator and place on a rack of a roasting pan and spoon extra marinade over each piece. Place chicken in the oven and bake for 25-30 minutes or until chicken is fully cooked. Remove from oven, garnish with coriander leaves and lime wedges and serve.
