Mixed Vegetable Curry

INGREDIENTS

⅓ cup oil
2 onions, finely chopped
1 ½ cup different coloured bell pepper cut into bite size pieces
2 cups aubergine cut into bite sized pieces
2 cups potatoes, peeled & cut into bite sized pieces
2 cups frozen mixed veg
⅓ cup Supreme Garlic Paste
½ tsp Supreme Turmeric Powder
2 tsp Supreme Chilli Powder
3 tsp Supreme Cumin Powder
3 tsp Supreme Coriander Powder
½ tin Supreme Chopped Tomato, blended
½ cup water
1 tbsp Supreme Kasuri Methi
2 tbsp Premium Finest Tomato Puree
½ tsp sugar
Salt to taste
Handful of chopped coriander

METHOD

Heat oil in a pot over medium-high heat. Add onions and sauté until golden brown. Add garlic paste and cook out the rawness for a few minutes then add turmeric powder, chilli powder, kasuri methi, cumin powder, coriander powder and salt. Stir well and cook for a few minutes, add a splash of water if needed to stop spices from burning. Pour in blended tomato, tomato puree and sugar; stir well and cook until oil separates. Now add the rest of the vegetables and ½ cup water. Stirring occasionally, cover and cook until tender. Check for seasoning, garnish with chopped coriander and serve.
