INGREDIENTS

Achari Fried Chicken Sandwich:
¼ cup Supreme Achar Masala
1 ½ tsp Supreme Cumin Powder
1 ½ tsp Supreme Coriander Powder
Juice of 1 lemon
¼ cup oil
1 tbsp Supreme Ginger Paste
1 tbsp Supreme Garlic Paste
Salt to taste
4 large or 6 small boneless & skinless chicken thighs
4 cups Supreme original Chicken Fry mix

Chilli, Garlic & Coriander Mayo:
1 cup mayonnaise
Handful of coriander leaves
2 green chillies
2 cloves of garlic
2 tbsp water
1 tsp sugar
Salt to taste

Kachumbar:
Ingredients:
1 cup finely sliced red onions
2 cups finely sliced white cabbage
1 finely chopped green chilli
⅓ cup chopped coriander
1 tsp sugar
Juice of 1 lemon
Salt to taste

1 loaf of ciabatta
Mango chutney
Mixed leaves/ rocket leaves or iceberg
Oil to deep fry

METHOD

In a bowl, mix together Achar Masala, cumin powder, coriander powder, juice of 1 lemon, oil, ginger paste, garlic paste and salt. Add chicken thighs and mix well. Cover and marinate in the fridge overnight. Take chicken out of the fridge and bring to room temperature. In the meantime make the mayo and kachumbar. For the mayo; Add coriander leaves, green chillies, garlic cloves and 2 tbsp water into a blender or chopper and blend until smooth. Add to the mayonnaise along with sugar and salt and mix well. Set aside in the fridge. For the kachumbar; Add all the ingredients into a bowl. Mix well and set aside. Heat enough oil in a pot to deep fry over medium-high heat. Add original Chicken fry mix into a sealable sandwich bag and add 1 chicken thigh at a time. Seal and shake until fully coated. Repeat with remaining chicken. Fry chicken thighs in batches until golden brown and fully cooked through. Remove chicken thighs from oil and place on a wire rack on baking sheet to drain any excess grease. Repeat with remaining chicken thighs. To assemble; cut the bread horizontally in half. Spread the bottom half with chilli, garlic and coriander mayo; top with mixed leaves. Then fried chicken thighs and kachumbar. Spread mango chutney on the top half and place on top. Slice and serve immediately.
