Walnut & White Chocolate Brownies

Ingredients

130g butter
200g caster sugar
2 eggs
½ cup cocoa powder
¼ tsp salt
½ tsp baking powder
1 tsp vanilla extract
70g plain flour
70g Supreme Walnuts, roughly chopped
150g white chocolate, roughly chopped
(Leave small handful of walnuts and white chocolate to put on top of the brownies)

Method

Pre-heat the oven to 180°c. Grease and line a 20cm baking tray or dish with greaseproof paper. Melt butter in a saucepan over medium heat. Once melted, add to a mixing bowl along with caster sugar, eggs, cocoa powder, salt and vanilla extract. Whisk well until fully combined, then sift in plain flour, cocoa powder and baking powder. Gently mix until just combined (over-mixing will change the texture of the brownies). Gently fold in chopped walnuts and white chocolate to the mixture. Pour the mixture into the prepared dish. Smooth out and top and cover with remaining walnuts and white chocolate. Bake in the oven for 20-25 minutes, then take out and set aside to fully cool when done – the perfect brownie should be slightly harder on the outside than the centre, which should still be soft/wet. Slice and serve.
