Pumpkin Halwa
Ingredients
10 Supreme Almonds, chopped
10 Supreme Pistachios, chopped
10 Supreme Cashews, chopped
50g ghee
2 packed cups of grated pumpkin
1 cup milk
Pinch of salt
½ cup sugar
¼ tsp Supreme Green Cardamom Powder
Pinch of saffron
Method
Heat ghee over medium heat. Add chopped almonds, pistachios and cashews and fry until golden. Using a slotted spoon remove nuts, drain on kitchen paper and set aside. To the remaining ghee add grated pumpkin and stirring occasionally cook for 15 minutes or until the pumpkin has softened. Add milk and cook until all is absorbed by the pumpkin. Add sugar and cook for another 10 minutes or until the sugar dissolves and halwa thickens. Stir in green cardamom powder and ¾ of fried nuts and saffron. Garnish with remaining nuts and saffron and serve.
