Date & Almond Cookies


300g softened salted butter
600g caster sugar
200g chopped dates
100g Supreme Almonds, roughly chopped
Pinch of salt
600g self raising flour (sifted)


Preheat oven at 170c. Cream the butter and sugar in a stand mixer until pale and fluffy. Add flour and salt and mix until well combined. Finally add chopped dates and almonds and mix until evenly distributed. Place a heaped tablespoon of cookie mix on baking sheets lined with greaseproof paper. (leave space around each cookie as it will spread out while baking). Place in the oven and bake at 170C for 12-15 mins or until edges are a bit golden.
