INGREDIENTS

230g softened salted butter
230g caster sugar
1 egg yolk (reserve egg white for later)
1 ¼ tsp baking powder
55g custard powder
55g cornflour
350g Supreme Maida Flour (all purpose flour)
Supreme Almond Flakes
Whisked egg white

METHOD

In a bowl cream the egg and sugar until light and fluffy (remember to scrape the edges). Add egg yolk and whisk until well combined. Now, sift in baking powder, custard powder, cornflour and maida. Use a spatula and mix until combined, then use your hands to bring the dough together and form a ball. Divide into 2 balls and shape into cuboids. Chill in the fridge for 1 hour. Preheat the oven at 180°c. Gently cut the shaped dough into 1 cm slices then place on a lined baking tray. Lightly brush the top with egg white and and 3-4 almond flakes on each biscuit. Bake in the oven for 13-15 minutes or until light golden.
