Tres Leches Pancakes

INGREDIENTS

1 cup plain flour 

1 tbsp baking powder

Pinch of salt 

¼ cup sugar 

¾ cup milk 

¼ tsp Supreme Cinnamon Powder

2 medium eggs

¼ cup melted butter

Supreme cinnamon powder

Whipped cream

Tres leches milk:

¾ cup evaporated milk 

¾ cup condensed milk

¾ cup full-fat milk

METHOD

In a jug, whisk together evaporated milk, condensed milk and full fat milk. Set the sauce aside in the fridge. In a bowl, mix together plain flour, baking powder, salt, sugar and cinnamon powder.  In another bowl, whisk together the milk, eggs and melted butter. Slowly pour wet ingredients into the dry ingredients and whisk until almost combined. The batter should be thick and lumpy. Set the batter aside for 15 minutes. Heat a non-stick pan over low-medium heat. Use a ¼ cup measuring cup to scoop and drop the batter into the pan. Cook until golden and bubbles appear on the surface. Flip with a spatula, and cook until golden brown on the other side. Stack the pancakes, then pour over the tres leches milk. Top with whipped cream and dust with cinnamon powder. Serve immediately.
