Fried Eggs with Masala Beans on Toasted Croissants

INGREDIENTS

½ onion, thinly sliced
2 tbsp oil
1 can of baked beans
½ tsp Supreme Turmeric Powder
½ tsp Supreme Cumin Powder
½ tsp Supreme Coriander Powder
½ tsp Supreme Chilli Powder
Salt to taste
Squirt of ketchup
¼ cup water
2 fried eggs, seasoned with salt and Supreme black pepper
2 large croissants, sliced open & lightly toasted
Chopped coriander

METHOD

Place a saucepan over medium heat. Add oil and onions, cook till soft and translucent. Add turmeric powder, cumin powder, coriander powder, chilli powder and salt. Sauté for 2-3 minutes then add baked beans and water, and simmer on low for 15 minutes. In the meantime cook eggs and lightly toast the croissants. To assemble place toasted (opened) croissant on a plate, top with masala beans and fried egg. Garnish with chopped coriander and serve immediately.
