Cilbir (Turkish Eggs)

INGREDIENTS

1 small garlic clove, chopped finely
1 cup greek yogurt, brought to room temperature
2 eggs

Water to poach eggs 

3 tbsp Zaytuna Olive Oil
2 tsp Supreme Chilli Flakes
Salt to taste

METHOD

In a bowl, whisk together yogurt, minced garlic and salt and spoon this into your serving dish. Fill a deep pan with water and bring to a gentle boil. Add cracked eggs and poach for 2-3 minutes. Meanwhile, heat a pan over medium-high heat and add olive oil and chilli flakes. Stir and cook for 1-2 minutes- till the Oil and Chilli have infused nicely. Using a slotted spoon gently remove the egg place on top of the yogurt mix. Drizzle chilli infused oil over the poached eggs and serve immediately with toasted bread of your choice.
