Bread Omelette

INGREDIENTS

3 eggs
¼ cup chopped tomatoes
¼ cup chopped coriander
¼ cup chopped red onion
1 finely chopped green chilli
¼ tsp Supreme Turmeric Powder
¼ tsp Supreme Chilli Powder
½ tsp Supreme Cumin Powder
½ tsp Supreme Coriander Powder
Salt to taste
Juice of ¼ lemon
Pinch of Supreme Garam Masala
2 slices of bread
3 tbsp butter

METHOD

In a bowl, whisk together tomatoes, coriander, red onions, green chillies, turmeric powder, chilli powder, cumin powder, coriander powder and salt to taste. Heat a large tawa/ frying pan over medium heat. Melt butter and add the egg mixture. Swirl the pan so that the mixture spreads evenly. As the omelette begins to set, quickly take 2 slices of bread and carefully dunk both sides in the omelette mixture before placing the slices of bread back in the middle of the pan. Squeeze a generous amount of lemon all over. Once the omelette has fully set, flip and sprinkle with Garam Masala. Now cook the bread side down. Tuck all sides of the omelette onto the bread and once the bread has toasted evenly turn one of slices onto the other to form a sandwich. Slice in half and serve immediately.
