Gingerbread with Orange Cream Cheese Frosting

INGREDIENTS

175g butter
200g dark brown sugar
3 tbsp golden syrup
200 ml milk
250g plain flour
2 tbsp Supreme Ginger Powder
1 tsp Supreme Cinnamon Powder
1 tsp Supreme Nutmeg Powder
¼ tsp Supreme Star Anise Powder
¼ tsp Supreme Clove Powder
1 tsp of baking powder
2 eggs

Frosting:
200g cream cheese, softened
100g butter, softened
400g icing sugar
1 tsp vanilla extract
Pinch of salt
Zest of of 2 oranges
60g Supreme walnuts, roughly chopped

METHOD

Preheat oven to 170°c. Butter and line a loaf tin. Melt butter in a saucepan over low heat. In a mixing bowl sift together plain flour, ginger powder, cinnamon powder, nutmeg powder, star anise powder, clove powder and baking powder. Once the butter has melted remove from heat and whisk in dark brown sugar, golden syrup and milk. Add eggs and whisk again. Slowly incorporate the wet ingredients with dry ingredients. Whisk well then pour batter into your loaf tin. Bake for about 45-50 minutes or until it is risen and a toothpick comes out clean. Let cool completely on a rack before frosting. For the frosting; add cream cheese, butter, icing sugar, vanilla extract, salt and orange zest into a bowl and beat until smooth and creamy. Spread frosting on top of the loaf and sprinkle with chopped walnuts.
