Vegetable Fritters

INGREDIENTS

3 ½ cup of finely chopped/ grated vegetables of your choice (peppers, onions,cabbage, carrots sweetcorn etc)
Handful of chopped coriander
3 green chillies finely chopped
2 tsp Supreme Coriander Seeds, lightly crushed
½ tsp Supreme Turmeric Powder
½ tsp Supreme Chilli Flakes
½ tsp Supreme Coarse Black Pepper
1 tsp Supreme Garlic Powder
1 tsp Supreme Onion Powder
1 tsp Supreme Garlic Paste
1 cup Plain Flour
Salt to taste
1 cup Yogurt
¼ cup ketchup
½ tsp baking powder
Oil to shallow fry

Garnish:
Sliced spring onions
Sour cream

METHOD

In a bowl mix together all the ingredients except oil, baking powder and garnish ingredients. In a large frying heat enough oil over medium-high heat to shallow fry. Once heated, stir in baking powder. Cooking in batches, gently add 1/4 cup of batter into the oil and cook until deep golden. Drain on kitchen paper. Garnish with sliced spring onions and serve with spring onions.
