Tandoori Battered Onion Rings

INGREDIENTS

1 cup plain flour
½ tsp of baking powder
3 tbsp Supreme Tandoori Masala Powder
1 ¼ cup sparkling water
Salt to taste
3 medium onions, cut into 1cm slices and separate the rings
½ cup plain flour
Oil to deep fry

Garnish:
Chopped coriander

METHOD

Heat oil in a heavy based pot over medium-high heat. In a bowl add 1 cup plain flour, baking powder, tandoori masala powder, sparkling water and salt. Whisk together to form a smooth batter. Dredge onion slices in plain flour then coat in batter and carefully drop into the hot oil. Cook onion rings until golden and crisp. Remove onion rings with a slotted spoon and place on a piece of kitchen towel to drain. Repeat with the remaining onion and batter. Garnish with chopped coriander and serve with mayonnaise.
