Sweetcorn Fritters
Ingredients
1 cup Supreme Gram Flour 1 large sweetcorn tin, drained ¾ cup water 2 tsp baking powder ½ tsp Supreme Coarse Black Pepper ¼ tsp Supreme Cayenne Pepper 2 tbsp chopped coriander Salt to taste 4 tbsp oil to Sliced green onions and coriander for garnish
Method
Sift flour, baking powder, Black Pepper, salt and cayenne pepper into a large bowl. Gradually whisk in ¾ cup water to form a smooth batter. Stir in drained sweetcorn and chopped coriander and let the batter rest for 7-10 minutes. Heat a frying pan over medium heat, add 2 tbsp of oil. Once hot, fry spoonfuls of the batter for 2 minutes on each side until golden and crisp. Garnish with spring onions and coriander and serve.
