INGREDIENTS
280g peeled king prawns
½ cup Supreme Maida
½ cup corn flour
½ tsp Supreme White Pepper Powder
½ tsp Supreme Chilli Flakes
⅓ tsp Supreme Coarse Black Pepper
Salt to taste
½ cup sparkling water
Oil to deep fry
Sauce:
1 tbsp salted butter
2 tbsp Supreme Garlic Paste
½ cup Supreme Red Sweet Chilli Pickle
1 tbsp dark soy sauce
1 tsp sesame oil
Garnish:
Sliced red chillies
Sliced spring onions
Sesame seeds
METHOD
Add prawns, white pepper powder, chilli flakes, coarse black pepper and salt into a bowl. Mix together and set aside to marinate for 20 minutes. After 20 minutes add in maida flour, corn flour and sparkling water. Mix well to form a batter. Heat enough oil in a pot to deep fry over medium-high heat. Once the oil is heated, fry the prawns in batches until crispy and golden. Heat a frying pan over high heat. Add butter and once melted add garlic paste. Saute for 1-2 minutes then add red sweet chilli pickle, soy sauce and sesame oil. Stir well and continue to cook for 1-2 minutes. Add the fried prawns and gently toss to evenly coat in the sauce. Lastly, garnish with spring onions, sliced red chillies and sesame seeds and serve immediately.
