Mooli Paratha

INGREDIENTS

Makes 8 parathas:
3 cups Supreme White Atta (flour)
1 ¼ cup boiling water
Salt to taste
1 tbsp softened butter
2 cups grated mooli
3 green chillies, finely sliced
Salt to taste
1 tsp Supreme Garam Masala
¼ cup chopped coriander
Oil/ ghee

METHOD

Add flour, salt, and softened butter to a bowl. Pour in boiling water and mix using a spoon to form a shaggy dough. Then use your hands to knead into a smooth dough. Cover and set aside. Grate mooli, squeeze out the excess water & add to a bowl along with sliced green chillies, salt to taste, garam masala & chopped coriander. Mix well & set aside. Divide the dough into 16 balls. Flour the dough balls & roll into 5-6 inch circles. Place ¼ cup of mooli filling in the center. Spread the filling across the paratha, leaving some space around the edge, then place another rolled dough on top. then place another rolled dough on top. Lightly dust with more flour and gently roll to fuse the paratha together. Heat a tawa or non stick frying pan over medium heat. Gently transfer paratha on to a hot tawa or frying pan and cook both sides, drizzling some oil or ghee on each side, until golden brown spots appear. Place onto a serving dish and enjoy. Pair with pickled vegetables for a tangy taste, or yoghurt for a mild taste. It even goes well with a cup tea!
