Mixed Vegetable Pakoras

INGREDIENTS

1 ½ cup chopped onions
1 ½ cup chopped aubergine
1 cup chopped potatoes
½ cup chopped coriander
4 green chillies, finely chopped
2 cups Supreme Besan (gram flour)
1 cup yogurt
¼ cup water
¼ tsp Supreme Turmeric Powder
½ tsp Supreme Cumin Powder
½ tsp Supreme Coriander Powder
½ tsp Supreme Chilli Powder
½ tsp Supreme Garam Masala
Salt to taste
1 tbsp Supreme Coriander seeds, lightly crushed
1 tsp Supreme ginger garlic paste
2 tsp Supreme baking powder
Oil to deep fry

METHOD

Add onions, aubergine, potatoes, coriander, green, chillies, salt to taste, turmeric powder, cumin powder, coriander powder, chilli powder, garam masala, coriander seeds into a large mixing bowl. Stir well then add besan and use your hand to really mix well into the vegetables. Add yogurt, water, ginger garlic paste and baking powder. Mix well until fully incorporated. Heat enough oil over medium heat to deep fry. Once oil is hot, gently add spoonfuls of mixture into the oil and fry until golden brown. Fry in batches and use a slotted spoon to turn the pakora around. Once golden brown and crisp remove from oil and drain on kitchen paper.
