Cheese & Onion Pasty

INGREDIENTS

1 ready rolled puff pastry sheet
2 tbsp butter
250g sliced onions
350g Maris Piper potatoes, boiled, mashed & cooled
1 cup mature cheddar cheese
Salt to taste
1 tsp Supreme Coarse Black Pepper
Egg wash or milk

METHOD

Melt butter in a frying pan over medium-high heat. Add sliced onions and salt. Sauté until soft and lightly caramelized. Remove from heat and cool. Preheat oven to 160°c. In a bowl, mix together cooled mashed potato, cooled caramelized onions mature cheddar cheese, salt and coarse black pepper. Unroll the pastry and keep it on the enclosed paper. Cut pastry into 4 large rectangles (or smaller rectangles). Spoon cheese mixture on one half of each one then fold over the other side and use a fork to seal the edges together. Lay the pasties on a lined baking sheet and brush them with milk or egg wash. Bake them for 40-45 minutes and serve hot or cold.
