Cauliflower Pakora

INGREDIENTS

Filling:
1 whole cauliflower cut into medium sized florets

Batter:
3 cups Supreme Besan (gram flour)
1 ¾ cups water
3 green chillies finely chopped
½ tsp Supreme Ajwain
½ tsp Supreme Garam Masala
Handful of chopped coriander
1 tsp Supreme coriander seeds, lightly crushed
½ tsp baking powder
Salt to taste
Oil to deep fry

METHOD

Boil cauliflower florets in salted water until tender. Drain, and set aside to cool. In a bowl whisk together all the ingredients for the batter. Heat oil enough oil to deep fry over medium heat. Dip the florets in the batter and ensure they are fully coated. Gently add to hot oil and fry until crisp and golden all over. Remove and drain on kitchen paper. Serve immediately with sauces and chutney of your choice.
